Strawberries marinated in hibiscus

Jean-Marc Bourgeois, chef of La Côte des Monts Damnés, in the heart of the Sancerre vineyard, shares one of his seasonal recipes with broken crêpes gavottes.

INGREDIENTS   

500 g strawberries (mara des bois)
1/2 l water
200 g sugar
10 g hibiscus flowers
Zest of half a lime
30 g ginger
½ vanilla pod

PREPERATION

Gavottes dough
Mix 35g of water and 6g of salt and 75g of butter and heat the mixture.
Next, mix 150g of icing sugar and 75g of flour, then add them to those of the first step.
Spread a very thin layer on a silicone sheet, then bake at 170°C for 10 minutes, peel off with a spatula.
The syrup
Boil the water with the sugar. Add the hibiscus flowers, lime zest, ginger and vanilla pod. Let cool to room temperature.
Strawberries
Wash and hull the strawberries.

DRESSAGE

In a deep plate, arrange the strawberries and put the very cold filtered syrup halfway up. At the last moment, add the pancake sheets.
For those with a sweet tooth, add a scoop of strawberry sorbet.
It's ready !
