Chocolate cake with olive oil

Olive oil and chocolate form a surprising but well-known taste association in baking. The ripening of the olives counteracts the bitterness of the dark chocolate and gives a melting texture to the desserts. This is why Villa Bellevue oil is also a great ally for sweet tooths.

Ingredients for 8 people
200 g wheat flour
60 g cocoa powder
2 tbsp. baking powder
220 g caster sugar
60g brown sugar
20 cl of fermented milk
15 cl of Villa Bellevue olive oil
2 eggs 1 tbsp. vanilla extract
10 cl of boiling water
10 cl of strong coffee

 

Preparation

Preheat the oven to 180°C.
Oil a crown mould. In a large bowl, mix the flour, cocoa powder, baking powder, powdered sugar, brown sugar with a whisk.
In another bowl, mix the fermented milk, olive oil, eggs, and vanilla extract.
Incorporate this mixture into the first.
Add boiling water and coffee.
You must obtain a homogeneous and very liquid paste.
Pour into the mould. Bake for about 55 minutes.
To check if the cake is well cooked, push a wooden skewer into it.
It should come out dry.
Leave to cool for 15 minutes and unmold the cake.
This chocolate and olive oil cake can be kept for 3 days, well wrapped.

A gourmet oil

Also called "the gold of Calissanne", the olives flourish on 60 ha spread over the entire estate. Villa Bellevue enriches a nice collection of four other references, ranging from fruity green oils to matured oils.

Villa Bellevue olive oil (AOP Aix-en-Provence) is made up of equal parts salonenque, aglandau, picholine and verdale. Harvesting is carried out on rotating olives (intermediate stage between green and black olives). Then the olives are stored away from light and air for 6 to 7 days. The fermentation process will reduce the natural ardor of the olive and develop the characteristic notes of maturity.

Villa Bellevue surprises with its cocoa color. Its notes of black olives, tapenade and truffle are characteristic of matured olives obtained through the fermentation process.

The palate is graceful and round, with flavors of blackberry and cocoa. Its taste is reminiscent of tapenade. This tasty olive oil is ideal with grilled fish and cheese, but Villa Bellevue is also a pleasure in combination with chocolate.
