Ingredients :
2 French poultry turkey cutlets
1 tbsp. tandoori spice mix
1 untreated organic orange
1 tbsp. cumin seeds
1 natural stirred yogurt
1 sprig of mint
1 clove of garlic
1 lime
2 tbsp. olive oil
Salt, ground pepper
- Préparation :
- Place the french poultry turkey cutlets between two sheets of baking paper and using a rolling pin, beat them to flatten them.
Cut each into four long strips. Place half on a plate and brush with 1 tbsp. olive oil. Season, sprinkle with cumin and grate half the orange zest. Roll the strips on themselves in a spiral and hold them with a bamboo pick.
Place the other half on a plate, brush with remaining oil and sprinkle with tandoori spices. Massage them well to distribute the spices on both sides. Roll them in the same way and hold them with a bamboo stick.
Whisk the yogurt with half the squeezed lemon juice, the peeled and crushed garlic clove, and the stripped and chopped mint, season.
Grate the remaining orange zest, set aside.
Heat an electric grill and sear the mini turkey skewers on both sides. Serve them well grilled and very hot, accompanied by yogurt sauce. On the orange skewers, add a pinch of the remaining zest. Offer the rest of the lime separately.
