Pyrenees pie and red fruits

Preparation: 20 minutes - Cooking: 50 minutes

Ingredients for 6 to 8 people :
• 4 eggs
• 180 g sugar
• 250 g of flour
• 10 g baking powder
• 150 g melted semi-salted butter
• 1 vanilla pod
• 150 g red fruits of your choice

Preparation :
Generously butter the mold, then place it in the refrigerator while preparing. Preheat the oven to 170°C.
Separate the whites from the yolks. Beat the egg whites until stiff. Whisk the yolks and sugar until the mixture whitens. Add the flour and baking powder. Mix everything then add the melted butter, the scraped vanilla pod and whisk until you obtain a smooth paste.
Incorporate the egg whites in 3 batches into the dough. Pour the dough into the buttered mold and bake for 40 to 50 minutes. Remove from the oven, let cool for 5 minutes before unmolding.
Tasting tip:
You can serve the pie with a little whipped cream and red or seasonal fruits.
