Roast lamb with figs

Preparation: 15 minutes    cooking: 30 minutes

Ingredients for 4 persons :
. 1 roast (shoulder or rack) of lamb weighing 600 g
. 12 fresh figs
. 50 ml balsamic vinegar
. 2 drizzles of olive oil
. 1 red onion
. 5 sprigs of rosemary
. 4 cloves of garlic
. 240 g of wheat pearls
. 30 g butter

Steps:
. Preheat the oven to 180°C. Slice the red onion. Wash the figs then cut them in half. Store half in a cool place.

. In a dish, place the other half of the figs with the roast lamb, garlic and red onion. Drizzle with olive oil, salt, pepper then add half the balsamic vinegar and the rosemary sprigs.

. Bake for 15 minutes. Then add the remaining balsamic vinegar.

. Extend cooking for an additional 15 minutes or a little more depending on your taste.

. Meanwhile, cook the wheat pearls as directed on the packet then drain and mix with butter, salt and pepper.

. Serve the roast by adding the rest of the fresh raw figs and drizzle with olive oil.
