Grapes variety:
Chardonnay (age of the vines 40 years); 4 years of aging on lees.
Eye :
Pale gold color, fine and dense bubbles.
Nose :
Fresh citrus notes, a little white fruit, sweet spice notes.
Mouth :
Attack of a beautiful freshness; a hint of bitter orange, a fine note of liquorice, a touch of iodine; nice substance and smooth on the palate.
Pairing:
Aperitif and meal: duck à l’orange, minced turkey with cumin, monkfish curry, foie gras and gingerbread crumble.
Dosage:
6 g/l (brut).
This beautiful cuvée is part of the A Travers Champs collection from Maison Colin, which has as its leitmotif: "the land guides our family". In this spirit, the winegrowers seek to develop champagnes that express the identity of the terroir which differs from one village to another, from one plot to another.
The history of the house located in Vertus in the Marne, dates back to the 18th century. It is shaped by generations of workers on the land and winegrowers deeply attached to their native land. They know every bit of it. This is how the family produces cuvées that reveal the many facets of the different terroirs. "Land, like wine, is a fascinating living material that we take great pleasure in taking care of," say the independent winegrowers who practice sustainable viticulture and whose estate is HVE certified, high environmental value.
We had the pleasure of tasting several cuvées from their range and each time it was a great discovery.
