In collaboration with the starred chef Julia Sedefdjian of the restaurant Baieta* in Paris, Trois Rivières offers a range of pairings with three of its aged rums.

Located in the far south of Martinique, Trois Rivières, one of the oldest distilleries on the island, produces A.O.C. Martinique pure cane rums recognized for their powerful and refined style. Daniel Baudin, the emblematic Cellar Master of the House, works on a range of meticulously aged rums to offer great tasting cuvées. These multiple expressions suggest as many agreements as the diversity of their profiles. Attached to the expression of terroir, Trois Rivières naturally teamed up with Chef Julia Sedefjian to experiment with surprising flavors and combinations.
“The accords made by Julia Sedefdjian offer a balance of the olfactory senses, they allow both to underline the power of our pure cane rums and to reveal their delicate subtleties. The exercise of food and rum pairings is an extension of the assembly work, playing on the different notes linked to the maturation and selection of the rums to find a coherent taste balance,” says Daniel Baudin.
Julia Sedefdjian is the youngest starred chef in France and has been the head of the Baieta restaurant since its opening in 2018. With Sébastien Jean-Joseph and Gregory Anelka, her two partners, they are committed to promoting Mediterranean and tropical flavors in a n gastronomic dimension. Claiming a good cuisine based on fresh and seasonal ingredients, Julia likes to extend the flavors of her dishes to the associations with wines but also spirits. “I discovered the work of Daniel Baudin with my Martinican associates. It's a product that conveys a culture and a region, and that echoes my cuisine. Lean marinated like a ceviche, passion fruit, cucumber, acacia sorbet
Rum pairing: Trois Rivières Cellar Reserve whose fruity notes match the freshness of the dish and the flavors of passion fruit. The honey notes are counterbalanced by the acacia sorbet which underlines the fine woodiness of Cellar Reserve.

Cannette smoked with beech wood, cromesquis with spices and dried fruits, celery semolina
Rum pairing: Trois Rivières VO Cuvée du Moulin. It presents a beautiful roundness and its aging for 3 years in oak barrels gives it a lively and dry profile that balances with the finesse of the can and the roundness of the cromesquis. The combination of sweet and savory highlights the tone of this cuvée.

Chocolate/sweet potato dessert
Three Rivers: VSOP Special Reserve. A light sweet dessert that the notes of candied fruit and honey from Trois Rivières VSOP complement perfectly. The surprising sweet potato brings a roundness and texture that continues with the delicate and spicy flavors of the rum. The raw and bitter notes of cocoa are harmonized by the delicate wood of this cuvée.
