A natural sweet wine, like an invitation to travel to the land of cicadas and crickets.

Grape variety :
Grenache Gris and Grenache Noir.
Terroir :
Primary massif shale terraces and hillsides.
Eye :
Amber colour, some tiled reflections.
Nose :
Fresh nuts, dried fruits, undergrowth, spices.
Mouth :
Long and silky, notes of caramel, coffee, cocoa, small dried fruits and candied fruits. Round and ample, melted and silky tannins.
Wine pairing :
Foie gras, aperitif, strong cheeses, desserts made from cooked fruit such as tarte tatin, baked apples, chocolate desserts.

Vinification:
The Grenache Gris is pressed from the harvest and vinified like a classic rosé. The blacks are de-stemmed and left to ferment at low temperature like a classic red. The fermentation is stopped at around 1040 density by adding superfine alcohol, which makes it possible to obtain a sweet taste.
The maceration then continues on grains for 1 to 2 weeks in order to refine the fruit and the texture, then these two wines, red and rosé, are assembled in order to unite the qualities of these natural sweet wines.
Vinification :
The cuvée is aged in vats for 5 years. The aging then continues in oak barrels for a minimum of 2 years; and this in an oxidative environment under veil so that the particular aromas of this wine can develop. The drums are never completely emptied. We always keep at least 20% of the old vintage to which the “young” wine is added. It is said that this is how the “memory” of this exceptional wine is preserved. Locally, this technique and the wine produced are called “RANCIO”.
