The eye for detail
The Franck Chavy wine estate covers 9.5 hectares in Morgon, Brouilly, Régnié, Chardonnay, Viognier and Beaujolais village. The oldest vines are between 100 and 120 years old, a treasure that needs to be pampered. It could not be otherwise for Franck Chavy who represents the fourth generation of this family estate in Villié-Morgon and Régnié-Durette.
“Winegrower is a profession of passion and creation where every detail (viticulture, oenology, wine ageing) counts. It is the accumulation and mastery of these details that will allow me to sublimate the qualities of the terroir and the wine.
Gamay, grown on our granite soils in Beaujolais, allows us to create wines with fruit and great aromatic complexity, which from the start in the mouth, line the taste buds with lots of roundness and volume. The mouths are straight, without hollow, with a long persistence. Our wines, which have great aging potential with lots of structure, have the unique advantage of always remaining very refreshing.
To obtain this type of wine, which corresponds to the ideal I have in mind, it takes a lot of rigor to tame our fabulous but demanding grape variety, which is Gamay. »
Fanck Chavy is a fan of micro oxygenation. He explains: "Traditionally, the wines were kept in large barrels (foudres) of 40 to 100 hl, which had the great advantage of allowing the wines to have a very slight supply of oxygen during aging and thus to mature. But these woods used for several decades brought deviant aromas linked to the fact that the heart of the wood cannot be cleaned. But by stopping this use, we have at the same time stopped the actual aging of the wines. There remains the solution of a contribution made with a device that diffuses the desired quantity of oxygen: this is micro-oxygenation. We had to carefully think about it and adapt it to our grape variety with infinitesimal doses. This contribution in very small quantities, controlled by a daily tasting, makes it possible to ripen, round off the tannins and open the wines by erasing a potential reduction. I don't think that many of us in Beaujolais have studied and implemented this approach. Ingres said "the details are small important ones that must be put to reason".
A beautiful wine is a wine made with passion that arouses emotions, pleasure, and which catalyzes conviviality. In many respects, it has many points in common with the way we discover and appreciate a work of art. »
