The only cooperative cellar in Côte d'Or was created in 1957 by six winegrowers in Orches in the Hautes Côtes de Beaune, 15 km south of Beaune. Over the years and alliances, the small cooperative cellar has grown.
Today, Nuiton-Beaunoy brings together 80 families of associated winegrowers and producers from the Côtes and Hautes-Côtes de Beaune and Nuits, which represents 350 hectares of vines in the Côte d’Or.
Thanks to its winegrowers, who cultivate their vines in many climates on the Côte d'Or, Nuiton-Beaunoy has almost infinite expressions of pinot noir and chardonnay. Among the 1,472 plots of vines, there is even a monopoly, a Gevrey-Chambertin 1er Cru Clos.
For all plot and climat vintages, the harvest is manual in 13 kg boxes before passing on the sorting table, complete destemming and pumping by gravity.
Vinification is carried out vat by vat before respecting as best as possible the expression and characters of the different terroirs to best reveal the potential of each grape, each terroir and each vintage. 68 different vintages are in production.
In 2020, the cellar obtained the “engaged winegrowers” label. Since 2023 year, the Nuiton-Beaunoy cellar offers the Cerço range, a range of five organic and eco-responsible wines from the vine to the glass with returnable bottles.
