Eye :
Silvery pink, bright.

Nose :
Fresh and delicious, floral, fruity citrus mandarin, strawberry, finely spiced nutmeg, cinnamon and white pepper.

Mouth :
Spicy but gentle, fruity with pink grapefruit, Mirabelle plum, fresh and quite ample throughout.

Shrimp, sushi, tomato-goat cheese tart, chicken skewer, citrus scallops, trout fillet, grilled fish, spiced prawns, chicken tagine with candied lemon, seafood paella

On the Montagne Blanche, a rocky promontory of light-colored tuffeau, the keep of the Château de Vendôme was once erected. "Capital" of Pagus Vindocinensis, Vendôme is bathed by the Loir divided into several arms and on the edge of which the Coteaux du Vendômois vineyard is located.
The “Coteaux du Vendômois” Appellation Contrôlée area extends over limestone hillsides topped with flint clay benefiting from a beautiful exposure. If the originality of the appellation is linked to this terroir, it is also linked to a grape variety, Pineau d'Aunis, from the priory of Aunis (near Saumur) in the 11th century. This cousin of Chenin Blanc has developed greatly in Vendômois since the beginning of the 20th century. It expresses itself magnificently and gives the Gris du Vendômois a completely original typicity. Pineau d’Aunis is grown almost exclusively in the Loir valley.
La Cave du Vendômois is a small collective of winegrowers created in 1929. Currently, a “hard” and dynamic core of three winegrowers owns approximately 80% of the total surface area of the cellar. The cellar itself represents 75% of the AOC Coteaux du Vendômois appellation.
