Its vinous expression allows it to accompany traditional Burgundian dishes: roast pork with cabbage, stew, poultry with Epoisses cheese.

 In 1877, Jean Boillot established his business selling "Bourgogne Mousseux, Spécialités de vins mousseux fins" (Burgundy Sparkling Wines, Fine Sparkling Wine Specialties). His son, Louis, used his bicycle to deliver his wines to Paris. It wasn't until July 4, 1975, that the "Crémant de Bourgogne" AOC (Appellation d'Origine Contrôlée) was granted. The company was then taken over by the Boussiet family, also from Nuits-Saint-Georges. This marked the beginning of the brand's international expansion. The vineyards cover 170 hectares stretching from the north to the south of Burgundy. Nearly a quarter of them are already farmed organically.
