This cuvée offers an elegant and contemporary interpretation of Saint Mont red. The Tannat grapes are harvested at full maturity in late September, the Tardif grapes in early October. Vinification favors gentle maceration by infusion to preserve the fruit and the finesse of the tannins.

The Tardif is an old grape variety originating from the Pyrenean foothills, an unknown variety from the Saint Mont AOC plot, blended with the legendary Tannat

Eye:
Light and brilliant with ruby ​​highlights.

Fleshy and airy, supported by fine tannins and a persistent freshness.

This "Cepages d'Auteurs" opens a new chapter in the history of the Plaimont vineyard with its distinctive peppery freshness. This wine represents the story of the Plaimont winemakers' perseverance in preserving their heritage. The Tardif grape variety was resurrected from just two pre-phylloxera vines found in the vineyard plot listed as a Historical Monument. Its rehabilitation within the Saint Mont appellation represents decades of research and labor.
