The white version of Cépages d'Auteurs showcases Petit Courbu, a rare grape variety from the Pyrenean foothills of which the Plaimont winemakers are particularly proud. While it is traditionally blended with Gros Manseng to bring balance and elegance, the originality of this cuvée lies in its central role in the blend. Cultivated since the 11th century under the guidance of the Benedictine monks of the Saint-Mont monastery, the vines flourish in a pristine natural setting. This wine reflects the exacting standards of the winemakers who elevate this living heritage to offer a unique expression of the Saint-Mont terroir.

The magic of this blend lies in separate vinification, allowing for the development of complementary aromatic profiles. Petit Courbu is vinified in demi-muids (600-liter barrels) and undergoes regular lees stirring every two weeks for eight months. It is then transferred to large oak casks, while Gros Manseng is kept in refrigerated stainless steel tanks. The two grape varieties are finally blended in the large cask for an additional eight months, allowing them to benefit from the same elegant aging process.
